Pass the Lentil Soup!


16 oz bag of lentils (your choice of color)

1 can of black beans

2 cans of Rotel tomatoes

1 can of chickpeas

1/2 yellow onion chopped

4 garlic cloves minced

1 tsp sea salt

2 T chili powder

1/2 tsp black pepper

1-2 cups of water depending on how you like the consistency to be


Prepare lentils as directed on the package OR prepare in the Instant Pot by combining 3 cups of water or vegetable broth with 1 1/2 cups of lentils. Cook using Manual for 9 minutes and then quick release the steam immediately.

Combine lentils with all other ingredients and simmer for 10 minutes.
